Tony’s Choice Cookies

I have to get over the idea that I need to be chatty.
I got this recipe from a coworker/friend whose last name is the same of mine, yet we are not related. Not relevant, but an interesting tidbit nonetheless.
I found it really didn’t matter if you are a dingbat-like cook and don’t realize you’ve picked up the self-rising flour by mistake (see beer bread recipe). The cookies still turn out yummy.
Thumbprint Cookies:
1 cup butter
1/2 cup packed brown sugar
2 eggs
1 tsp. vanilla extract
1/4 tsp salt
2 cups flour
chopped nuts (This year I used walnuts)
1. Preheat oven to 350.
2. Separate eggs.
3. Cream butter with sugar. Beat in egg yolks and vanilla. Stir in flour and salt.
4. Shape dough into small balls. Roll in slightly beaten egg whites, then in chopped nuts.
5. Press thumb into center of each cookie.
6. Bake for about 7 minutes.
7. Fill with frosting or jam as desired. I just use canned frosting tinted with food coloring. Tony was happy with that.

Tony ate the rest of these when we got home. I finished off the magic cookie bars. I think Joann got a few cookies, but I was pretty unconcerned with anyone else’s cookie consumption as long as I got to eat all my favorites and not share at all.
