I’m moving this week end and wanted to get rid of all the partial bags of baking supplies I had. Also, I have this box of banana cake mix that I still can’t remember why I bought it. That sentence had a lot wrong with it. Moving on…

So I took the classic cake mix cookie recipe and kind of threw in all the stuff I had laying around. Here’s roughly what I used, I didn’tmeasure anything so these are estimates:

1 box banana cake mix

1/2 c. melted butter (you could use margarine)

1 egg

less than 1/2 c. white chocolate chips

1/4 c. sweetened coconut flakes

less than 1/2 c. chopped pecans

Mix all ingredients, add a tiny bit of eater if they sweem too dry but don’t make the batter wet, it’s a dryish batter, drop by spoonful onto baking sheet, bake in preheated 350 degree over for 10 minutes. Cool on rack, eat so many you get sick.

They turned out yummy. Too yummy, in fact. I just got done celebrating the fact that I lost 5 pounds this month and then I made these things. I need to find someone to give them to before I eat them all.

Anyway, the point is, if you have cake mix, an egg and some butter you can make cookies. I usually use oats and chocolate chips for some texture, but I’ve used cereal, nuts, candy…all kinds of things.
