I went out and got sunburned today, despite avoiding the sun as much as possible. I just wanted to post this picture to show another option for the “best chocolate cupcake” recipe I posted a few days ago. These just have a simple whipped cream frosting to which I added some natural caramel flavoring. Mix together one stick of butter, 1 & 3/4 cup confectioner’s sugar, sifted, and a pinch of salt until it’s creamy. Increase your mixer speed to high and beat until its light and fluffy. Then add 1/3 cup whipping cream and 1/2 tsp of some extract or flavoring and beat it until its smooth.
This frosting is best made right before serving, and it’s easy to color. It’s not as sweet as buttercream and it makes beautiful, smooth cupcake tops.

looks great. i’m going to try that frosting, because buttercream is too sweet for me. have you ever tried italian or swiss buttercream recipes? i’ve heard they are tastier and not as sweet as american buttercream, but i have not tried them.

I’ve done swiss, and it’s not as sweet but still creamy and good. This one’s not nearly as sweet as buttercream either.
