Spiked Cupcakes- Your Ideas

I’ve been enlisted to bake “spiked” cupcakes for a friend’s 30th birthday party. Being that I don’t drink, I’m kind of a hilarious person to be doing this. I know for sure one flavor will be chocolate cake with rum buttercream- possibly a chocolate cola cake so it’s “Rum and Coke,” get it? So, I want to do at least two spiked flavors and then at least one kid-friendly flavor. For the kids I’ll do peanut butter and chocolate, always a hit. I need ideas for cocktail cupcakes. I’d prefer to keep the alcohol in the frosting so it doesn’t bake off. Yeah, it’s that kind of party. But I’d prefer that they taste great, so that’s not a huge issue. I have recipes for spiked orange frosting that calls for Grand Marnier or Triple Sec and for Irish cream frosting. I also have recipes for pina colada cupcakes, Kahlua cupcakes and margarita cupcakes. I’m just having trouble putting flavors together because I honestly have no idea what any of this stuff tastes like. I think I’ve had rum raisin cake before, so I have sort of a clue on that one but Triple Sec and stuff like that? Total square, no idea.

    What about cosmopolitan cupcakes? You could do a cranberry (juice) and lime (lime zest) cupcake with cranberry (juice), lime zest, triple sec and vodka buttercream.

    And I know there are some mojito cupcake recipes out there as well.

    I don’t drink either. But I go by the cocktail recipe in terms of ratios. I get people to taste test for me as I don’t drink.

    you know i’m a mojito fan. coconut lime sounds delicious.
    with something like kahlua, chocolate would work.

    How about Baily’s Irish Cream Frosting on a cupcake?

    Bailey’s Irish Cream Frosting

    1 pound powdered sugar
    5 1/2 tablespoons butter, softened
    1/4 cup milk
    1/4 teaspoon salt
    2 tablespoons Bailey’s Irish Cream

    Beat all ingredients in a small bowl until fluffy.

    A couple recommendations though:
    1. Increase the amount of Grand Marnier in the cupcakes to get a more orange flavor (or add orange zest).
    2. I add Grand Marnier to the sweetened whipping cream to add subtle flavor.
    3. Garnish with a bit of orange peel soaked in Grand Marnier.

    i made chocolate and coca cola cupcakes with a rum glaze that turned out great. you can add brandy or rum to a simple sugar glaze after you’ve heated it and it’ll taste liqour-y and delicious:

    liqour can be easily added to chocolate ganache after heating, as well.

    i’ve also made chocolate port cupcakes, but i wouldn’t recommend those. it might’ve been the recipe i used, but they were super fucking bland.

    I once had some really cute one’s from Sprinkles cupcakes that had keylime frosting. Very yummy. The above link is for the vegan one’s. Never tried them though.
