Cardamom Plum Cupcakes

My mission this week end was to see if and how baking in Circa Ceramics bowls was possible. I told Nancy and Andy that if all went well I’d develop a super special Circa Ceramics cupcake for them- and I did. But it’s so super special that I decided to make a video about it, and I’m not going to have time to shoot it until next week end. But, I also had a bunch of plums Teno decided he was too good to eat, so I used this Julie Hasson recipe for cardamom plum cupcakes. These would be really good with honey cream cheese- or even unfrosted- but I made about 10 lbs of Italian meringue buttercream for my super special Circa Ceramics cupcakes so I used that on top of these. Also good, just really lazy. Oh, and if you aren’t sure how to make Italian meringue butter cream, this video will show you how.

For the cupcakes you’ll need:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 3/4 tsp ground cardamom (or all spice)
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 2 eggs
  • 1/3 cup milk
  • 3 red plums, washed, pitted and sliced thin

Then you:

Preheat your oven to 350 degrees and line a muffin pan with paper liners. In a small bowl, sift together flour, baking powder, cardamom and salt. In a larger bowl, whisk together the sugar, butter and eggs. Alternately mix in the flour mixture and milk, making three additions of dry ingredients and two of milk. Scoop batter into pan- only fill 3/4 full. Trust me on that one. If you have extra batter so be it, but don’t fill these to the top. Arrange 2-3 slices of plum on each cupcake and bake 20-25 minutes. I’d make little fan shapes, because I just tossed mine on and they were kind of ugly. Then cool them how I always tell you to cool things. I’m tired tonight.

    I think I took the name of your blog a little too seriously. I loved the idea of plum cupcakes, made them tonight and as I was putting them in the oven, realized I neglected to add the butter. So..I baked…and then I destroyed – they were like eating leather without the butter…sigh…I’ll try again tomorrow.

    Ohhh poor Giz!!! (in response to above). I recently added way too much butter to a recipe but amazingly that actually was delicious (and probably hideously bad for everyone’s heart who partook). These plum cupcakes look great, but you’re such a tease with that shot of the Cannoli cupcake at the end!!!!
