Organic Cranberry Lemon Muffins

There are, at all times, at least 10 different kinds of power bars- also, granola, two-bite cookies, flax crackers and the crowning jewel- our weekly delivery of fresh organic fruit. Yeah, I know.
This week our fruit delivery was a little… inedible. Namely, three lemons and a bag of fresh cranberries. Mind you, that’s what’s in season but it’s not exactly snack worthy. So I took the whole kit home and made these muffins. Muffins, of course, are fruit- only better. I totally forgot these were even on the shelf-o-snacks today but my officemates assured me they were tasty so I feel comfortable not placing them in the failures category.
You will need:
- 2 cups all-purpose flour
- 2/3 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup chopped fresh cranberries + 1 Tbs sugar
- 2/3 cup milk
- 1/4 cup butter, melted
- 1 teaspoon lemon zest
- 1/2 teaspoon vanilla extract
- 1 egg, beaten
Then you:
Preheat oven to 400°. Combine flour, sugar, baking powder, and salt in a large bowl. Chop the cranberries and shake the 1 Tbs sugar over them. Stir cranberries into flour mixture; make a well in center of mixture. Combine milk, butter, zest, vanilla, and egg; add to flour mixture, stirring just until mixed. Spoon batter into 12 muffin cups coated with cooking spray. Bake for 18 minutes or until muffins spring back when touched lightly in center. Remove muffins from pan immediately; place on a wire rack.
I think that’s a Cooking Light recipe for cranberry lemon muffins, but I can’t remember. I memorized it. You can ask Belinda, I recited it to her at work today, and she recited the Captain Planet rap to me. I shit you not. (He’s the mega- mac daddy of ecology!)

fresh cranberries + orange juice + sugar.
boil gently until the cranberries pop. chill in refrigerator.
i have no idea on measurements. i’m bad at that. i just throw things in the pot until i think it’s right. but it may be something like a bag of cranberries, a cup of orange juice. and maybe 1/4 cup sugar. all organic, of course.

This is not a great time of year for fruit. Root vegetables, on the other hand….hm, radish cupcakes for all?
