Lyn’s Lemon Berry Cake with Bonus Bikini Action

lemonmeringue-croppedSo this is a weird way to start a Bake and Destroy post, right? Well don’t get too distracted, it’ll all make sense in a minute. See, a few weeks ago I discovered KanDi Swim – bakery-inspired swimwear. I know, right? With names like Cupcake and Ice Cream Sundae how was I to resist?

The twisted people behind the company (I mean how cruel… you name something “Milkshake” and then you taunt me with images of bikini models!) were awesome enough to offer me bikini of my very own. Knowing that I would rather poop in public than ever wear a bikini (by now you guys have seen me, right? I am many things. A beach bunny is not one of them.) I asked if instead, I could give one away to one of my readers. They agreed – I picked out the Lemon Meringue over here and all was well.

Only… how the eff do I give away a bikini on Bake and Destroy? It makes no sense except that I think everything this company makes is super cute and I want someone I like, namely a reader of mine, to own it!

So… I sat on it for a while. Then, like some kind of a snacky angel from cake heaven, my friend Sammy’s mom emails me to tell me about a fabulous lemon cake she just made! I met Lyn (Sammy’s mom) a few weeks ago when she asked me to bake for Sam’s graduation… and I met Sammy in our Zombies in Popular Media class. (Yeah… we went to art school.) We instantly fell in love and had imaginary babies together and when I met Lyn it didn’t take me long to figure out how Sammy got so cute. So long story short, Lyn gave me her Lemon Berry Cake recipe to share with you guys and, in doing so, made the fact that I am offering you a lemon bikini slightly less weird! OK, recipe first – in Lyn’s very own words.

To make the cake you’ll need:

  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 & 1/2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2  cup fresh lemon juice (about 2-3 lemons) (add a squeeze for    good measure!)
  • 1/2 cup whole milk or sub/almond milk
  • 1 tablespoon grated lemon peel
  • 1 pint fresh raspberries
  • 1 pint fresh blueberries
  • A few tablespoons of flour on reserve

Then you:

In a mixing bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt; add to creamed mixture alternately with milk. Add lemon juice. Stir in lemon peel.

Roll 1/2 cup of raspberries in reserved flour gently, and repeat with blueberries. This will help the berries not to sink to the bottom of the pan during baking.  This is very important.

Pour into a greased and floured 10-in. fluted tube pan. Sprinkle berries into cake by either mixing at random or spreading one half of cake with raspberries and one half with blueberries.

Bake at 350 degrees F for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; invert onto a wire rack. Cool 10 minutes longer. Place rack on waxed paper.

Top it with a glaze of lemon juice, confectioner’s sugar and water.

    Hmmm… I love vanilla cupcakes with lemon buttercream sooo maybe a cupcake bra and panty set? a cupcake on each cup and a mini one on the back?

    I also love salmon salad but I’m not sure I would want that incorporated into any clothing.. haha.

    My favorite food is cupcakes of course so I’d say heels with cute cupcakes all over them. I don’t wear heels but maybe I would if they had delicious cupcakes all over them.

    I like food too much to choose just one true favorite but baklava is definitely one of the most delicious things you can eat. I say, a baklava-inspired hoodie (think layers) because I’m dreaming of cool weather.

    It’s a testament to my weirdness that I have no problem thinking of various things:
    -Baklava beanie (I’m tempted to make one – in my head I can see how the layers would work, with a pistachio-colored tuft on the top)
    -Birthday cake overalls? The fabric shoulder straps could be candles, and the torso the top tier of a cake.
    -Fig shirt! I love the color combination in figs.

    I just noticed that you said “favorite food”. My favorite food is probably stir fried rice noodles. Hahaha um.. probably a skirt, whiteish with tan ish streaky patterns and random vegetables scattered all over it.

    I’m not sure how much I want a bikini, but I just had way too much fun making these things up.

    so i’m actually in the process of making a dress (or skirt) out of tofu boxes (taking a LOOOONG time to get enough boxes) to wear in my derby pictures (since i’m tits n’ tofu)

    i’d also like a knitted cap that represented seven layer dip– refried beans, tortilla chips, lettuce, salsa, tvp, vegan cheese, and a dollop of (vegan) sour cream on top in the form of a pouffy ball.

    … because i never think about food and clothes or anything… and while i would never wear a bikini or go to the beach for that matter i’d love to gift it to my sister for her upcoming honeymoon

    I would like to see some clothes that are inspired by the English dish ‘Fish and Chips’. Possibly a pair of trousers with one half being the fish and the other, chips. A bikini might work well too or a top and trousers.

    Well, this isn’t very original, but my favorite food is cupcakes, and I would love to have a big old 50′s style cupcake hat/veil piece with lots of beads and sparkles. Yes, I am 80 years old on the inside.

    My FAVOURITE thing to eat is french fries! A hula skirt of layers upon layers of dangling salty fries would be the death of me… probably literally.

    o0o0ooooh well i would have to say my favorite food today is thin crust authentic italian pizza with red sauce, prosciutto, mozz, parm reggiano, pine nuts and arugula…umm just craving bc i cant ACTUALLY have that if i want to wear that sexy lil bikini..suck >:0 so lets see i want some italian pizza aviators ; ) the “arms” of the sunglasses would be the ‘thin crust’ aspect of the pizza..tan of course with a few burnt (brown) spots, the outer ring of the lenses would be the pizza crust as well, the lens itself would be layered…like those old school dorky glasses that u could flip up the lenses…there would be a redpizza sauce layer, an off white mozz layer, a white speckeled parm reggiano layer, a tannish-red with white prosciutto layer, a cool pine nut layer and finally a green arugula layer…all layers u could see through but theyd be colored with shapes of the differnt pizza toppings…u could flip up whatevr topping u wernt in the mood for and roll with a perfect personalized pizza all day everyday! I’d love to see life through a thin crust authentic italian pizza lense..what about you?

    I love apples or any type of fruit. How cute would it be to have a bikini where the bikini top was like red with a little green leaf on each side or each part of the bikini top was a strawberry.

    I love ice cream sundaes. I love to eat, paint, and photograph them. So of course, I think it would be utterly awesome to have an ice cream sundae bikini. Why a bikini, you ask? Well, the bikini top could be ruffled and have a cherry around the nipple area and the bottoms could be patterned like a waffle cone, with a dark chocolate color around the top/waist area, then beaded with multi colored beads so that the bottoms would look like a waffle cone dipped in chocolate and sprinkles.
