French Toast Cookies + A Cupcake Wars Giveaway

When Stefanie of Red Velvet Stefanie sent me her French toast cupcake mix Teno could not wait to make it. Every day he harassed me to make them – but the mix makes 24 and I’m pretty sure we never need two dozen cupcakes in our house. We compromised when I remembered a recipe I used to make when I was a kid – cake mix cookies.

Now, if you’re using store-bought cake mix you can take that recipe and tweak it to your heart’s content. German chocolate was always my favorite, but I’ve had success with banana cake mix, coconut and walnuts and lots of other combinations.

Since this is a gourmet cake mix, made with actual flour and sugar instead of whatever the balls cake mix is made of, we tweaked my family’s favorite recipe a bit.

We used:

  • French toast cake mix
  • 2 eggs
  • 1 cup butter, melted and cooled
  • 1 cup quick oats
  • 1 cup white chocolate chips
  • 1/2 cup milk

Basically, you mix everything together and bake it for about 12 minutes. Not too tough, but Teno and I made a video to show you how. After you watch, keep reading to find out how you can bake along with Stefanie when she competes on Food Network’s Cupcake Wars July 27th.

That was a family production, by the way. Tony was our camera man. And yes, Teno says bad words and I’m trying to make him stop so just don’t encourage him please.

    The first thing I ever baked were chocolate cupcakes with vanilla frosting, all courtesy of Ms. Betty Crocker of course! Haha. For the first time though, recently I started baking things from scratch and vegan! Vegan Cupcakes Take Over the World! Has been my personal favorite thus far and a perfect platform for ideas and modification! The first one I made was a combination of the chocolate cupcake with peanut butter frosting and chocolate gnash smothered on top. Definitely reminiscent of a reeses’! but sooo much better. Vegan Cookies Invade Your Cookie Jar and Veganomicon are definitely up there though.

    The first thing I ever baked by myself was the Hershey’s recipe for brownies (the classic, five-minute one), and that’s the thing I still bake the most. When I lived at home my dad always wanted me to make “my” brownies, and they were never the same when my mom made them… even though it was the same recipe. I guess mom didn’t put half a bag of chocolate chips on top.

    It didn’t require baking in the oven, but it did require a baking dish and melting chocolate: chocolate-covered popcorn bars. And they were GOOD, despite my mother’s fretting and doubts before/during/after.

    The first thing I ever baked by myself was probably some kind of cookie, brownie or cake recipe. I started baking when I was in my early teens, I can’t even remember when I started exactly.

    The first thing I ever baked by myself was a simple lemon sheet cake from a Duncan Hines cake mix. I felt extremely proud of myself for being able to mix in the right amounts of all the ingredients (egg, oil, and water). I topped it off with Duncan Hines chocolate frosting :) As you can see, my baking back then wasn’t very sophisticated; come to think of it, it still isn’t! I sheepishly still use a lot of cake mixes and have embarrassingly never baked anything from scratch before. Hence, it would really up the fanciness of my baking if I won this giveaway because these mixes are definitely far classier than the typical ones available in the grocery store! Maybe if I had the cupcake wars pack, people might actually think I baked something from scratch ;)

    The first thing I ever baked all by myself was probably cupcakes of some kind or banana bread.

    I am definitely going to have to try making these french toast cookies! I’m a fan of recipes that involve cake mix, I feel lame for doing it but its just so easy! One of my favorites is one for cookies I found using chocolate cake mix, brewed coffee, and chocolate chips.. sooo good.

    I’m pretty handy in the kitchen, but I had never baked before I started reading this blog. The first thing I ever baked by myself was the second recipe you posted for red velvet cupcakes. My (then) three year old son, Lonnie, was super excited to help. I mixed all the dry ingredients and set them aside… and didn’t put them in the cupcake papers. So what came out of my oven looked like little cups of clotted blood. It was disappointing but kind of hilarious, and we had enough leftover ingredients to make a second batch, which came out lovely and delicious. Red velvet cupcakes and homemade Oreos (http://smittenkitchen.com/2007/05/my-kingdom-for-a-glass-of-milk/) are still his favorites.

    Anything and everything I could put in my EZ Bake Oven! After that, my mom had a Betty Crocker “Cooking for Two” cookbook that had a great brownie recipe in it. The real kind, melt the chocolate, add sugar, eggs…etc. I have no clue how old I was, I’m sure grade school. Junior High brought my love of homemade cinnamon rolls. Haven’t stopped baking since.     I think if I recall correctly, the first thing I tired to bake on my own was a batch of cookies one summer I was alone in the house all day before the 7th grade started. I really wanted cookies, and I figured it couldn’t be that hard to make them; I mean I used to help my Mum all the time. So I got the recipe out, lined up all the ingredients and went to town!

    Unfortunately I obviously didn’t pay too close attention because I switch the amounts of sugar and salt around… As you can imagine they were disgusting… But I also realized my mistake, tossed them and had enough time to start over! I had hot, fresh cookies for my Mum & Da by the time they got home from work and they were never the wiser about my little sugar/salt fiasco!

    Oh, good. My kid isn’t the only one. PHEW! Umm…the first thing I ever baked myself was Nestle Tollhouse Cookies. Then I ate, like, 1/3 of the dough and got a really bad tummyache.

    The first thing I ever baked by myself was probably cream puffs. Well, that’s what I thought they were anyway. I didn’t realize at the time that you had to fill them with something, LOL! My mother likened them to “dog squeaky toys” because they kind of whistled when you squeezed them. Oops!

    My first solo baking experience was a batch of peanut butter cookies. Unfortunately I confused the teaspoon and tablespoon and used the tablespoon to measure the baking soda. Very Gross! They were tossed outside for the birds and squirrels. Luckily it didn’t discourage me too much. Since then I have had many successful batches of cookies.

    The first thing I ever baked was a chocolate cake in my new EZ-Bake Oven that I got for Christmas when I was 5. I brought it to our family’s New Year’s party thinking that the party of 15 people would all be able to enjoy the tiny cake!

    I don’t remember exactly what it was… but I was about 6 and I used my EZ-Bake Oven to make it. Not the best tasting treat, but boy was it fun!

    Those cookies sound so good! I’ve never heard of making cookies using a cake mix — interesting. The first thing I ever baked was tollhouse cookies. Once I learned how, I baked them so often I had the recipe memorized. :)

    I think the very first thing baked all by myself as a chocolate torte when I was 7 or 8. I was alright, but clearly made by a kid, my mother was really cool about letting my try stuff out in the kitchen. I have been baking and cooking ever since then, and encourage my kids to help and play in the kitchen.

    Your recipe would easily be a favorite around here, I will bookmark it for the ‘must try’ list. :)

    The first thing I ever baked was chocolate chip cookies. I was 10 and was in charge of my brother and sister while mom worked 3 different jobs. Even at that age I wasn’t scared to add different ingredients to spice them up. That first batch was really good. I followed the Nestle recipe but added white chocolate chips and cinnamon. I still make those from time to time.

    The first thing I ever baked by myself was a banana loaf, only I made the executive decision to fill it with gads of chocolate chips. I haven’t made it any differently since!

    Bread! I thought Id impress my boyfriend and make some real home made bread. I made spaghetti and served the bread, he bit into it and spit it out laughing. It was disgusting and still doughy. For some reason, bread is still my achilles heel :(

    The first think I ever remember baking by myself (if you don’t count an easy bake oven) was sugar cookies. Some were burnt because our oven was uneven, but the others actually tasted alright.

    The first thing I ever made was chocolate coconut oatmeal piles of yumminess They turned out so well I enlisted my younger sister to make them with me on a daily basis until we got busted by Mum for eating so many! We really thought we were pro bakers and the great thing is we never had to bake them just melt the butter and stir and chill. We then got ingenious and learned to bake brownies from a mix and go luxe gourmet by putting our concoctions on top! My easy bake oven was an epic fail from the start because it made baking too too tedious for one little flat “cookie cake” Cheers you guys! PS I do have a USA addie too darling <3

    The first thing I baked all by myself was Chocolate Chip Banana Bread. I’ve been making it for years and have perfected the recipe since. It’s quite delicious.

    I’m pretty sure the first thing I baked was some sort of chocolate cake, using my sister’s easy bake oven :] I know I probably enjoyed it, but I doubt others did, haha! That light bulb never really cooked evenly

    One time when I was little… I begged my Mom to let me make a “treat” for my Dad all by myself. She finally sat down at the kitchen table and pretended to read a magazine (more like kept an eye on me, so I didn’t burn the house down). I scoured the cupboard for ingrediants. I ended up getting out a cookie sheet, putting two pieces of wheat bread down on it, smothered the two pieces of bread in canned cherry pie filling, sprinkled Lawry’s Garlic Salt Seasoning on the top of them (I thought it would be good seeing as I would watch my Mom put it on everything), baked them in the oven for 5 minutes, took them out and then sprinkled more garlic salt and a pinch of pepper on top. When my Dad came home I was so excited. Being the awesome Dad he is, he actually took a bite out of it and acted like it was the best thing he ever tasted! I must say, my Pops is the bomb!!!

    I can’t enter but, the first thing I ever baked was a chocolate cake in the easy bake oven, with the chocolate frosting packet that comes with it and I sprinkled rainbow sprinkled and crumbled chocolate chip cookies all over it! i think I have a picture of it somewhere! Shortly after that, my mom let move on to the real oven where I first made Snickerdoodle Cookies! yum!!!

    Your kiddo is adorable. The first thing I ever baked was vanilla cake, I must have being 8 years old, I used a big amount of salt instead of sugar. Is you can imagine the ,cake was pretty disgusting. I still wonder how did I mix sugar with salt.

    the first time i baked something was with my aunt.. i believe we were making a cake, &i wasn’t much older than three at the time. she asked me what all the ingredients we needed were &i told her mixing flour, sugar, &enough frosting to lick. haha she also taught me to ‘sample’ the frosting on other people’s birthday cakes before we sang.. i got in trouble for years for doing that!

    The first thing I made all by myself was Pate Choux! It was the coolest feeling because they are so delicate, and yummy once you fill them, but they are so easy to make once you know how! My family consists of four generations of bakers so it was cool to learn something so awesome at a such a young age . . I can’t wait to pass it on to my daughter!

    Does the Easy Bake oven count?

    I baked a lot with my mom so I got all ambitious and tried to make a lemon meringue pie when I was 12 or 13. It was a disaster… I didn’t know what a double boiler was and I couldn’t quite envision it as my mom described… I thought it would be a good idea to put saran wrap over the pot, then place the second bowl on top of that.

    Obviously the saran wrap melted. And what did I do? Grabbed paper towels to clean the melted plastic of the bowl of course! Without turning off the stove first! (gas burner – see where this is going?)

    The towels of course caught fire, I screamed, and finally some common sense jumped into my brain and I tossed the flaming paper/plastic combo in the sink.

    Thankfully I am much better at baking now.

    When I was five I had begged Santa for my Easy Bake Oven and when Christmas came there it was. I have enjoyed baking all my life, it gives great joy to create and bake cakes & cookies, not too good with pies, but good with cake, cookies and brownies. I am so passionate about it, I will work all night long into the morning till I am done creating a cake for someone. Almost always it is given as the gift for the event, It comes from the heart with much love and goodness and that is given back to you once they have tasted the cake. Yummmm!!!! That’s why I love bakin’ cakes and cookies – Teaching my grandchildren every time I visit them…They now have their Easy Bake Oven too….

    I remember the first thing I baked was my mom’s recipe for blueberry muffins. I was around 9 or 10 and they were nothing like when she baked them. I think I may have *forgotten an ingredient, but I had to start somewhere!

    *I’ve done this as an adult too when I’m rushing around and not paying enough attention in the kitchen.

    The first thing I ever baked was the worlds smallest chocolate cake. I made it in this tiny tin in my Easy Bake Oven (oh what that little light bulb could do) and I decorated it with Red Hots in the shape of a heart. My mom has a photo of me holding it and beaming with pride.

    okay. i don’t think i can consider it to be baking btu it was a dessert i put together as a kid. it was a recipe i discovered on pbs kid show Zoom. it was called a zebra cake, and it was made of whipped cream and chocolate wafers and it was spectacular. i really should recreate it…homemade this time.

    When I was a kid, my mom refused to buy store bought cookies but also didn’t have time or desire to bake cookies. What’s a kid to do? Well, bust out the kitchenaid mixer, of course! The first thing I really perfected were chocolate chip cookies from one of those send-in-proofs-of-purchase-and-$5-shipping-and-handling kids cookbooks. Eventually I got an easy bake oven, but I remained loyal to my ABC Cookbook (I think that’s what it was called). My mom still has it somewhere. Anyway, apparently it was a decent book because I’m still addicted to chocolate chip cookies – and baking! – to this day.

    I don’t know about the FIRST thing that I ever made, but I remember the first thing that I was so proud of that I did all by myself… Egg Drop Soup. I was about 13 or 14, and I was experimenting in the kitchen. For some reason, wanted vegetable soup. I had a brainstorm, and for some reason, I was like, “if I beat the eggs, and then add it to the soup, that should make the egg strands!” Sure enough, it completely worked! I was so proud. I still remember that day that I felt like an adult, that I cooked something harder than egg salad.

    The age: 8…The cake: Chocolate and too dry…The Frosting: Vanilla and melted in the microwave…Little me: Stubbornly ate it despite my mother offering to help me with a second cake…

    Thankfully, these days I can make chocolate cake that I eat happily, and not to prove a point. But these cookies might jump to the top of my baking list.

    Chocolate crazy cake, that leavens with vinegar and baking soda and you mix in the pan. Not sure how old I was, maybe 8 or 9. Grandma’s chocolate chip cookies were the first thing I remember baking, but that was with her help. I remember putting in too much vanilla, and worrying it would ruin the cookies, but she said “don’t worry, honey, that’s just flavoring.” Now I hardly ever measure the vanilla.

    I baked a lot of cookies, cakes, and brownies, growing up, but one thing I remember making all on my own when I was probably in middle school or so was soft baked pretzels. Sooo good. I loved making them cos they were so easy. From there I moved on to pancake batter from scratch and would get up before my parents and make it and surprise them.

    It’s all a little fuzzy now, but I think one of the first things I baked was a batch of mini-cheesecakes – the cheating kind with Nilla wafers for the crust. I’m usually dangerous in the kitchen so it was good that I started with something simple.

    the first thing i ever baked solo was a jelly roll. i think i was about eleven. the recipe came from an alphabet recipe book i had just received. it wasn’t the most beautiful thing i’ve ever seen, but it was still delicious.

    Most likely chocolate chip cookies. The most fun thing I ever cooked as a kid was brandy snaps, which I then entered in our local 4-H fair food judging competition. The judges were horrified!! that a minor!! used alcohol!! in baking!! But there was no rule against it, so in the end they gave me a blue ribbon, and then next year changed the rulebook to specify that there could be no alcohol in the recipes :-P

    Well, I guess my first food experiment was a cake in my easy bake oven but after that it was a pie I made when I was 14 and it was supposed to be banana cream pie but it turned out to be banana soup in a shell.

    The first thing I ever baked from scratch were vanilla cupcakes. They were pretty disastrous, not only because I way overdid the vanilla (I still add extra vanilla to everything, but in this case I put in, like, a quarter of a cup) but I forgot the baking powder. End result: Very Vanilla Cookies.

    The first thing I baked ever was brownies from a mix. Being a sugar hound from a young age I dumped at LEAST two cups of the white stuff in, as well as about half a bottle of Hershey’s syrup. My family loved these, which says a lot about them, I think.

    When I was a university I realised that since i wasn’t at home i could bake whatever i wanted! And go crazy on the extas i added too! I must have had a serious chocolate craving that day because i made quadruple chocolate “american style” cookies. They were pretty much chocolate bars with a bit of cookie inbetween. But ive tried making the recipe since and it never comes out as good. Beginners luck, huh!

    The first thing I tried to bake by myself was chocolate chip cookies – this, of course, did not go terribly well as somehow I had just completely forgotten to add the flour. Everything else had been measured and added, I rolled them all out, put them on the sheet, put them in the oven and checked on them and they had become a soupy mess. I think what I did was scoop it all back into a bowl and add the flour after the fact since they hadn’t been in the oven too long – pressed it back into the pan and they ended up “okay” cookies in sheet form. Oops.

    My first memory of baking was at about age 4 with my mom and I burnt my arm really bad.

    Because of that I got scared of the oven for a long time.

    But once I finally got over it, the first thing I baked was chocolate chip cookies (and ruined them by keeping them in too long).

    Oh my. The first thing I baked on my own was horrible! I was about 9 years old and decided to bake PB cookies. I thought everything went well, until we tasted them! I measured the baking soda and powder in cups and the cookies were horrible! I was so devastated because I wanted to surprise my mom. :( I am proud to say that I didn’t give up and can bake with some of the best now!

    Watched the Cupcake War and was totally inspired to work on some of my own cupcake recipes. …and I was really interested in checking out your blog! Love the title!

    I’ve been baking alongside my Mom since I could walk, but the first thing I ever baked on my own was my Mom’s butter cookies! Always for Christmas….green, Christmas tree shapes and red, bell shapes. It’s still a must have every year! They turned out really nicely and awesomely introduced me to a cookie press at an early age! :D Unfortunately, now that I’m lactose-intolerant, those cookies will only be a fond memory for me!

    First thing I ever baked from scratch was Guiness chocolate mini cupcakes with Bailey’s cream cheese frosting. Sadly this was in March. I am 37 years old and just made my first from scratch recipe. Happily they were very delicious!! Every teacher in my school had to have one of my liquor and beer cupcakes since I couldn’t give them to the kids.

    The first thing i ever baked all by myself was a box of brownies. I had always baked from scratch with my mother and grandmother, since i can remember, but for a beach get together with my friends i was asked to make brownies. This call mind you came at midnight by my best friend and i was none to happy since im generally grumpy when woken up at midnight. I got up, woke my mom up, I was 15 for this so i couldnt drive, and went to the corner supermarket (which wasnt that near hence i had to wake my mom up and she wasnt a ray of sunshine either), got my box and headed home to bed. Next morning i woke up at 7 am made my boxed brownies and they were the hit of the party! I was so proud of myself even thought they came from a box so I kinda cheated, lol. Now im studying to become a pastry chef and im baking all by my lonesome!!!!
