I really wanted to make banana and honey whoopie pies today, but for once I did not have any bananas rotting on my counter. It’s been a while since I’ve baked something new and it’s almost time for an epic bake-a-thon for my cousin’s baby shower (see my post about my sister’s shower here) so I thought I’d see if I could turn my family’s favorite Julie Hasson cupcake recipe into a whoopie pie.
I started by making some crunchy peanut butter cakes with a touch of cocoa powder:
- 1 & 1/2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking power
- 1 tsp baking soda
- 1/2 tsp salt
- 4 Tbs butter, room temperature
- 4 Tbs non-hydrogenated vegetable shortening
- 1/2 cup packed brown sugar
- 1/2 cup crunchy peanut butter
- 1 tsp vanilla
- 2 large eggs
- 1 & 1/2 cup buttermilk
Preheat your oven to 375 degrees. I use a whoopie pie panbut you could also use a cookie sheet lined with parchment paper. In a small bowl, sift together the flour, baking soda, baking powder and salt. In the bowl of a stand mixer beat together the butter, shortening, brown sugar, peanut butter and vanilla for about 3 minutes. Add the eggs one at a time.
Add 1/2 the flour mixture and beat until well combined, then add 1/2 the buttermilk and beat until combined. Add the rest of the flour mixture and beat, then the rest of the buttermilk. Drop about 2 Tbs of batter into each cavity of your whoopie pie pan, or onto your lined cookie sheet. Bake for 10 minutes, then cool in the pan for 5 minutes. Remove from pan and cool completely on a wire rack.
Then I sandwiched two cakes with peanut butter buttercream and dunked them in chocolate.

breckinridge vanilla porter and ice cream…yes it’s a beer float!
and strawberries and cool whip…yum.
Orange and pineapple, and chocolate and peanut butter, naturally.
Chocolate ice cream in hot coffee … like a coffee float.
cottage cheese and plain potato chips

Chocolate and Peanut Butter OR Mint and Chocolate. Two combinations where you can’t go wrong.

Cream cheese and Tabasco. Separate, together, doesn’t matter. I love them both!
Ginger and lemon. Sandwiching two gingersnaps with lemon curd rocks – probably cause of the sugar, but who’s complaining?
chunky peanut butter and braeburn apples. really anything with peanut butter is good.
Balsamic and strawberries!
Molasses & brown sugar!!!

celery and cream cheese. my mom is hyperglycemic so our treats were often veggie based.
I really really love bacon and banana on a pizza. Or a banana wrapped in bacon and then grilled in the oven…it’s possibly the best thing ever.
Granny Smith apples and pepper jack cheese! I also love ginger with lime and anything with sriracha.
Pepperjack cheese, avacado slices and bacon on toast
Or peppercini peppers on a salad with ceaser dressing
I love gorgonzola cheese and honey. When I was a kid I loved american cheese sandwiches with grape jelly.
Mac & cheese with a lil bit of corn.

I love warm huckleberry (or blueberry in the off-season) pie and chocolate ice cream. It tastes so good!
