I like toast. I really do. I could eat toast every day. Toast with vegan butter. Toast with avocado and salt. Toast with jam. In an effort to help everyone enjoy toast as much as I do, Stephanie Strowbridge has created I Like Toast: Every Morning is a Good Morning. Containing 25+ recipes for well, yeah… toast (including spreads, sandwich ideas and more) this is a really fun little book that I know I’ll use often.
Stephanie’s husband Stephen is responsible for the illustrations that really make this adorable cookbook pop, and Lynette Gram did the yummy photography and contributed some of the recipes – including the one I’m sharing with you today. It’s packed with sensible info about eating a healthy breakfast, and lots of great resources in the back, too. I think you’ll love this book, so here’s one of the recipes to check out before you buy!

Vegan Chia Apple Spread

- 3 Tbs chia seeds
- 1/2 cup apple juice
- 2 small apples chopped
- 1 Tbs fresh lemon juice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup walnuts
- 1/4 cup raisins
- Soak chia seeds in apple juice for 30 minutes.
- Combine all ingredients in a blender or food processor until almost smooth.
- Spread on toast!
